Disclaimer: We recommend running this through without coffee 1-2 times to prepare this for making great coffee.

Step 1:
Preheat the water. Bring kettle water to a boil and remove from heat.
We do this to keep the temperature of the moka pot from getting too hot and cooking the coffee, imparting a metallic taste.

Step 2:
Grind your coffee about as fine as table salt.
For this you can use any coffee grinders or you can simply use ground coffee
You’ll need between 20-22 grams of coffee, depending on how strong you want your espresso to be.

Step 3:
Unscrew your Sisitano espresso maker’s bottom.

Step 4:
Add water and fill to the line of your Sisitano brewer.

Step 5:
Insert the filter basket to the bottom part of the brewer.

Step 6:
Add your coffee into the filter basket.
A general measurement is to completely fill the coffee holder and shake it a bit so the ground coffee evens out or you can gently even it with your fingers
Don’t pack your coffee holder tight as it will not allow steam and water to go through as evenly.

Step 7:
Screw the top and bottom together.
If the bottom is preheated, use gloves to not burn yourself!

Step 8:
Put the brewer on a gas stove and use moderate heat.
Make sure the handle is not exposed to the heat.
Leave the top lid open.

Step 9:
Wait till you are about to see dark brown coffee coming out and hear a puffing sound.
When the coffee coming out turns lighter or yellowish, remove your Sisitano espresso maker from the heat source and close the lid.

Step 10:
Cool down the bottom of the maker to prevent the coffee having a metallized taste.
You can use a wet towel or just simply run tap water over it.

Step 11:
As soon as the coffee stops bubbling, pour it into your espresso cup or mix it with milk or water.

Step 12:
Enjoy your freshly made coffee using your Sisitano espresso maker!
